Lucie Thiéblemont moved to Chablis to join her partner Charly at the family domaine, Domaine Paul Nicolle. With experience in Champagne, Lucie purchased a very old plot of Pinot Noir north of Chablis. The climate of Chablis is more akin to that of Champagne than the rest of Burgundy.
Domaine Lucie Thiéblemont is notable for its old-vine heritage, unique Kimmeridgian terroir, and winemaking philosophy. It produces wine primarily from old vines, with some over 100 years old, enhancing the complexity and character of the wines.
The domaine emphasises minimal intervention to winemaking, reflecting the authenticity of its terroir and the natural environment–noted for their structure, minerality, freshness, and depth.
