Appearance: Medium purple

Aromas: Red fruits and notes of garrigue

Palate: Full body—a sophisticated wine expressing a round feel in the mouth with soft tannins from a limestone base. A straight and airy wine, fresh with a hint of fir notes and a good length in mouth. Subtleness develops over the years, and the wine matures with notes of toast, chocolate, and elegant oak.

Pairing:  Red meat

Notes:

The parcel of red was cleared and replanted in 2003, in a protected are in the heart of Gariggue. The vineyard was planted on a small limestone plateau, at 250 meters altitude on a slight slope towards the North West. The fresh micro-climate and the characteristic draining of the karst limestone-clay plateau give the terroir its minerality.

The vines are pruned in a low-drained goblet, and grapes are hand-picked in small yields of 25hl/ha. Blending is carried out during the picking, for the blend to benefit from the different ripeness of each varietal. The wine is created via a direct press with light racking and a natural fermentation process. The barrels are kept warm, and the wine is aged on lees over 12 months with minimal movement and filtration to keep a lively wine.
