Notes:
The white wine vines are planted on a deep clay and sandstone terroir. The deep soil calls for an early harvest and reduces any hydric stress—preserving the grapes’ freshness and maximising the terroir’s expression.
The vines are pruned in a low-drained goblet, and grapes are hand-picked in small yields of 25hl/ha. Blending is carried out during the picking, for the blend to benefit from the different ripeness of each varietal. The wine is created via a direct press with light racking and a natural fermentation process. The barrels are kept warm and the wine is aged on lees over 12 months with minimal movement and filtration to keep a lively wine.
