Notes:
This cuvee is born from a unique collaboration between a Japanese chef and an Alsacian winemaker who came together to create a selection of wines to be matched specifically with omakase. The result is a "mischievous" wine - surprising, elegant, and highly aromatic. "Gyotaku" draws inspiration from a traditional Japanese art form.
Hand-harvested grapes, whole-cluster pressed, aged on fine lees in large foudres for 6–9 months, blended after wine clarification.
