Appearance: Medium straw

Aromas: An enticing blend of spice, floral, and buttery notes on the nose

Palate: Light-medium body—dry white wine, fresh on the palate with a drop of lemon and nectarine. A good length in mouth, with a very subtle roundness. Mineral-driven finish with soft, plush notes of pear

Pairing: This wine was specifically created for omakase (or sushi)

Notes:

This cuvee is born from a unique collaboration between a Japanese chef and an Alsacian winemaker who came together to create a selection of wines to be matched specifically with omakase. The result is a "mischievous" wine - surprising, elegant, and highly aromatic. "Gyotaku" draws inspiration from a traditional Japanese art form.

Hand-harvested grapes, whole-cluster pressed, aged on fine lees in large foudres for 6–9 months, blended after wine clarification.
